Keltic Lodge at the Highlands is hiring!
Who We Are – Keltic Lodge at the Highlands is a historic Cape Breton Resort and is located in the heart of Cape Breton Highlands National Park overlooking the Atlantic Ocean. Just 2 hours from Sydney, NS and a 5 hour drive from Halifax, the resort has been welcoming guests to Cape Breton, Nova Scotia since July 1940.
We are seeking the following restaurant positions:
- Banquet & Assistant Food & Beverage Manager
- Line Cooks
- Food & Beverage Servers
- Kitchen Dishwashers

Job Type- These are permanent, full-time positions, starting Fall/Winter 2023.
Hours of work- 30 to 40 hours per week. Shifts include: weekends, holidays, morning, afternoon and evenings. Overtime may be required.

Bonus – An additional peak season bonus of $2 per hour for each hour worked will be provided to all employees after October 31st 2024 who a) work a minimum of 500 hours between May and October 2024 and b) are still an employee of Keltic as of October 31st 2024. Other eligibility criteria are defined in the internal bonus policy. Bonus structure for future seasons is to be reviewed annually and not guaranteed.

Title of Position – Banquet & Assistant F&B Manager
Number of Vacancies- 1
Wage- $22 – $25 per hour + tips
Essential Functions-
- Oversee and execute all functions throughout the resort.
- Manage and oversee all banquet and restaurant operations including all set-up and tear-down of function spaces as required.
- Ensure guest dietary restrictions and allergies are communicated appropriately with kitchen and guest.
- Attend weekly BEO meetings with all department heads involved with the execution and planning of events.
- Banquet Bar setup and stocking with the requirements of the different functions.
- Maintaining positive relationship and communication with on-site contact.
- Attention to all details during restaurant and banquet set-up and service to offer an unrivaled experience to the guests.
- Quality checking and follow-up with group contacts and guests in restaurant and banquets..
- Clear communication written, verbal and email.
- Daily inspections of event & outlets spaces to ensure set ups are as they should be based on customer requests.
- To check Email daily and respond in an efficient and timely matter.
- Memo’s at least weekly depends on what’s happening.
- Linen inventory monthly.
- Monthly inventory of Banquet & Restaurant supplies (Cutlery, Glassware, China, etc.).
- Inventory and ordering of liquor, beer and wine.
- In conjunction with the Food & Beverage Manager, scheduling of staff for daily events that meet guest service standard.
- Assisting F&B Managers with payroll and shared gratuity as well as Manager tip outs.
- Coaching and disciplining staff when needed including training on a regular basis.
- Hands on with set up and service of functions and events.
- Ringing in and billing of food, liquor and wine with BEO and consumption.
- Balancing monies of cash bar with inventory and sales.
- Complete cash outs for different categories of sales if required.
- Preparing gratuity sheet daily after function so as to divide monies fairly to each server.
- During times of low banquet activity, provide operation support to the Food & Beverage Outlets.
- Act as a Floor Manager in the absence of the Food & Beverage Manager.
- Any other duties as required or communicated by the F&B Manager.
- Communicate effectively with coworkers and customers in an English work environment.
Required Qualifications-
- At least 5 years of experience in the food and hospitality service sector, with at least 1 year of supervisory/management experience.
- Minimum high school.
- Professional English proficiency to communicate in English work environment
- Accuracy and speed in executing assigned tasks.
- Ability to stand for a long period of time and lift supply items.

Title of Position – Line Cook
Number of Vacancies – 5
Wage- $18-$20 per hour, based on experience, plus tips
Essential Functions-
- Set up and stocking of stations with all necessary supplies
- Prepare food for service (e.g., chopping vegetables, butchering meat, or preparing sauces)
- Cook menu items in collaboration with the rest of the kitchen staff
- Answer, report and follow executive or sous chef’s instructions
- Clean up station and take care of leftover food
- Stock inventory appropriately
- Ensure that food comes out simultaneously, in high quality and in a timely fashion
- Comply with nutrition and sanitation regulations and safety standards
- Maintain a positive and professional approach with coworkers and customers
- Communicate effectively with coworkers and customers in an English work environment
Required Qualifications-
- Culinary school diploma, completion of apprenticeship program or at least 2 years of proven commercial cooking experience, including experience as a Line Cook, Restaurant Cook or Prep Cook
- Excellent understanding of various cooking methods from a variety of cuisines
- Professional working proficiency in English language both verbal and written (language of work)

- Ability to stand for a long period of time and lift supply items

Title of Position – Food & Beverage Servers
Number of Vacancies – 4
Wage- $15.00 per hour + tips
Essential Functions-
- Focused memorization of menus, wine lists, wine pairings and key guest notes
- Explain ingredients, preparation techniques to guests
- Consistently offer seamless, professional and engaging service, checking on guest satisfaction
- Assist guests in beverage selection, enter items in POS system
- Keen awareness of guest allergies and dietary restrictions
- Act as a food runner for expeditors
- Handle complaints and concerns of guests
- Execute side duties and checklists in between service including organising storage areas, cleaning of the dining and lounge area, polishing cutlery, glassware, etc.
- Taking drink orders, delivering food and beverages to guests in a timely manner
- Ensure the dining room and lounge area is clean and tidy at all times
- Clearing tables and re-setting for future meals
- Responsible for bringing daily float to each shift, completing daily server cash out
- Responsible for maintaining a cheerful, courteous disposition and a neat, clean and professional image with the ability to maintain a calm demeanour in a fast paced, high intensity environment
- Complete daily, weekly and monthly cleaning duties as per requirements and training
- Communicate effectively with coworkers and customers in an English work environment
Required Qualifications-
- Completion of secondary school
- Past serving experience in a fine dining establishment
- Professional English proficiency to communicate in English work environment
- Accuracy and speed in executing assigned tasks

Wage- $16 per hour + tips
Essential Functions-
- Clean and sanitize items such as dishwasher mats, carts and waste disposal units
- Operate dishwashers to wash dishes, glassware and flatware
- Place dishes in storage area
- Sanitize and wash dishes and other items by hand
- Scour pots and pans
- Clean and sanitize kitchen including work surfaces, cupboards, storage areas, appliances and equipment
- Handle and store cleaning products
- Receive, unpack and store supplies in refrigerators, freezers, cupboards and other storage areas
- Remove kitchen garbage and trash
- Sweep, mop, wash and polish floors
- Communicate effectively with coworkers and customers in an English work environment
Required Qualifications-
- Basic English proficiency to communicate in English work environment.
